Do you know I love The Pioneer Woman? Let's for a moment pretend I'm as cool as her. (Yeah right!) I am going to teach you guys how to cook one of my most favorite things to eat ever. Ever.
It's no secret that I love to cook, and certainly no secret that I love to eat! I always loved to eat, however, I didn't really have interest in cooking until about my senior year of high school. One year before moving out of my parent's house. How convenient, huh? So in that year, I learned a few of my favorite dishes, but unfortunately, not all of them.
I did, however, learn the dishes that mean the most to me. One of my favorites, the ultimate comfort food for me, the dish that will take me back home and make me think of my Mommy, the dish that I will make till the end of time, is tomato and eggs. It is the easiest dish in the whole world! It only calls for seven items: rice, tomato, egg, olive oil, soy sauce, sugar, and salt. (Yes, there's soy sauce and salt. Get over it.) This recipe is a family recipe that was invented in my mom's village in China many years ago. My grandmother taught my mom how to make it, my mom taught me, and I will teach my daughter. And, well, I'm teaching you too!
So here we go! What you will need:
(I left the sugar out of this photo - ops! And, no, you don't need a toaster.)
I am making tomato and eggs for one, because I am just one. However, you can make it for a lot of people! I usually use one egg per person, and depending how big your tomatoes are, I usually use one tomato per person too. Unless you're using roma tomatoes. Then I use about two per person. And if you're using cherry tomatoes, well, then use your best judgment.
You will need a bowl of cooked, hot rice. I always have cooked rice on hand because, well, I'm Asian. If you're using leftover rice (like I did) just nook it in the microwave until it's nice and hot!
Chop up your tomato.
Fry your egg with some olive oil. You could use butter if you prefer. Whatever tickles your fancy.
Flip it! (Flip it good!) Do NOT let the yolk get hard! It's very important that the yolk stays runny!
Put the egg directly on top of the rice. I am doing this because I am just one person. If you're making this for a lot of people and you have a lot of eggs, put the eggs in a shallow serving dish and let the other eaters get their own rice from a rice cooker. Now if you're lazy or don't have tomatoes, throw a little soy sauce on this and you get another one of Kim's favorite comfort foods: Rice and egg. (I have very technical names for these dishes.) But I will continue on, for this is not rice and egg, this is tomato and eggs.
Then, put the tomatoes in the same pot. Let it get all nice and mushy.
Then add some water.
Like this much water. Let it cook down and get saucy! (True fact: My most favorite thing to eat is rice and sauce. Any kind of sauce. Which is why I like my tomato and eggs very saucy!)
Then add some salt. Couldn't tell you how much. But enough to have a very thin layer covering the surface. If that makes sense.
Next, add the soy sauce. Again, couldn't tell you how much. But enough to make a circle once around the pan. If that makes sense. I don't know if you can see it in the picture, but if you look closely, you'll see a dark circle inside the mixture. That's about how much soy sauce.
Then comes the sugar. This is all based on personal preference. It totally depends how sweet you like things. The first few times you make this dish, there will be a lot of trail and error. You just have to keep tasting it until you get the sweetness you want. I have made this dish so many times that I just know. Personally, I use about two non heaping spoonfuls of sugar. After you get the sweetness you want, you're ready!
Pour the tomato mixture on top of the rice with egg. If you're making this for muliple people, then you would pour the tomatoes on top of the eggs in the shallow serving dish. At that point, your dish is ready for the dinner table! Let your guests put rice on their plate, and then scoop tomato and eggs on top.
See how runny that yolk is? Just the way I like it! Hot, runny, yellow, delicious yolk. Ohh yeah!
Because I'm gangsta, I like to mix it all up to where it looks completely unappetizing!
But oh me oh my it tastes so good!
